We grow and sell small quantities of certified organic Shittake mushrooms. We have 250 logs on locally harvested white oak, red oak, chestnut oak, and beech trees from the farmland. We will be increasing our mushroom production by adding other varieties and other mediums such as wood chips, sandwich boards, and experimenting with growing our own spore cultures. In 2011, we were accepted as part of a Cornell Research study for small scale mushroom production and receive our spores from Field and Forest Products. We are in our second year of the study and will be sharing yield results on the various tree species as the study progresses in 2012.
